This is a common form of rice paper because it is easy to shape, and the product is easy to stack during packaging and transportation.<\/p>\n\n\n\n<p>According to the source of raw materials: depending on the starting materials used to grind the rice paper, it is divided into rice paper, corn rice paper, flour rice paper, and tapioca rice paper.<\/p>\n\n\n\n<p>\u2013 According to the seasoning added during the production process. Besides the main ingredients such as flour, water, salt, rice paper is also mixed with some additional spices to create a unique product. Rice paper is indispensable in delicious dishes such as spring rolls, spring rolls, boiled meat and rice paper rolls. The general process in the production of rice paper is as follows:<\/p>\n\n\n\n<p>Soaking: This is the process of softening the rice, the rice grains absorb the water and swell, making the milling (crushing) process easier. When the cake is cooked, use a thin bamboo stick or bamboo tube under the cake to remove the cake and spread it on a bamboo griddle. Currently, there are many steam coating machines to help reduce labor and speed up the production process. Powder solution is pumped into the filling system and then injected into the mold placed on the automatic conveyor. Then the mold runs on a conveyor belt through the autoclave chamber.<\/p>\n\n\n\n<p>Steaming the cake: makes the cake cooked (the starch is completely gelatinized). Steaming time is from 1 to 5 minutes.<\/p>\n\n\n\n<p>Cake drying: to reduce the moisture in the cake to 12-14%, inhibit the growth of microorganisms. Handmade production, people bring blisters to dry in the sun (2-3 hours, on a good sunny day). Currently on the market there are drying equipment that helps increase productivity and reduce dependence on weather.<\/p>\n\n\n\n<p>Shaping and packaging: Depending on the requirements, the cake is shaped (square, round) with different sizes and packaged.<\/p>\n\n\n\n<p>Production of rice paper in Thuan Hung craft village &#8211; Thot Not &#8211; Can Tho<\/p>\n\n\n\n<p>Through preliminary survey, Thuan Hung rice paper products are currently produced by 02 processes:<\/p>\n\n\n\n<p>Production process of rice paper, rice paper rolls: rice is soaked for 12-15 hours and then milled with water (ratio 50:50, rice: water).
