On October 28, 2023, Korean – Viet Nam Incubator Park (KVIP) organized a Council to self-assess the results of implementing the city-level science and technology task “Applying dried fruit processing technology to create shaped processed products taking advantage of raw materials in Can Tho city”. The project is co-chaired by Msc. Tong Thi Quy, and Prof. Doc. Tran Thanh Truc; KVIP is the lead agency.
The project was carried out with the main goals are (1) Applying the technological process of processing dried fruit to create shaped processed products using fruit sources in Can Tho city; (2) Transferring the technological process to a qualified processing facility. Project implementation time is from October 2021 to the end of December 2023.
The project has been completed according to the registered contents including:
(1) Determine the optimal technical parameters for the processing process of 5 types of shaped dried fruits;
(2) Determine the storage time for 5 types of shaped dried fruit products;
(3) Complete the processing process of 5 shaped dried fruit products on a practical scale;
(4) Implementing the process of processing and preserving shaped dried fruits for the Can Tho Center for the Application of Scientific and Technological Advancements;
(5) Introduce the product and announce the processing and preservation process for 5 types of shaped dried fruits.
The project has achieved main products including:
(1) Technological process of processing shaped dried fruits of 05 types of fruits: mango, banana, soursop, dragon fruit and papaya;
(2) Shaped dried fruit products of 05 types of fruits: mango, banana, soursop, dragon fruit and papaya (5kg/type);
(3) 02 scientific articles: “The influence of heat treatment on the quality of shaped plastic dried dragon fruit” published in the Industry and Trade Magazine (ISSN: 0866-7756) in August 2023 and “The influence of Raw material ripeness to shaped dried fruit quality” published in the Journal of Agriculture and Rural Development (ISSN: 2815-6153) June 2023;
(4) Guide 10 undergraduate students who successfully defended their graduation theses
The Council highly appreciated that the project was implemented according to the explanation and achieved a product that met the requirements. However, the project management board needs to make corrections in the reports to complete them before official acceptance. The Council agreed to accept the project basis.
