On May, 17, 2023, CASTA organized a Council for self-assessment of the results of the performance of city-level science and technology project “Determination of antioxidant and antifungal activities of young rice for use as functional foods and skin care cosmetics”. The project is co-chaired by Dr. Nguyen Phu Tho and Msc. Dang Chi Thien, and CASTA is the lead agency.
The project has been carried out with the main objective to determine the antioxidant activity and anti-fungal level of young rice can for applying to the production of functional foods and skin care cosmetics. The duration of the project is from July 2021 to June 2023.
The topic has completed two registration contents including:
(1) Research to determine the antioxidant activity of young rice for the production of functional foods;
(2) Study to determine the antifungal level of young rice for use as skin care cosmetics.
The project has achieved the main products including:
(1) Production process of young rice flour with high antioxidant activity with a scale of 1 kg/batch for 2 rice varieties IR50404 and Nang aromatic;
(2) Production process of young rice extract with antifungal properties with a scale of 1 liter/batch for 2 rice varieties IR50404 and Blood dragon; Production of young rice flour of 2 rice varieties IR50404 and Nang aromatic with high antioxidant activity (2 kg quantity);
(3) Production of young rice extracts of two rice varieties IR50404 and Blood Dragon with high antifungal activity (2 liters);
(4) 02 scientific articles: “Effect of light intensity on chlorophyll and polyphenol concentrations in leaves of rice variety IR50404” published in the Journal of Agriculture and Rural Development, Issue 24 – 2022; “Evaluation of changes in content of bioactive substances and antioxidant capacity of young rice leaf meal (Oryza sativa) during processing” published in the Journal of Nutrition and Food, Volume 18, No. +6) –Year 2022.
The council highly appreciated that the project was carried out in accordance with the explanation and achieved the product that met the requirements. However, the project management board needs to make corrections in the reports in order to complete them before the official acceptance. The council agreed to accept the basis of the topic.
