Checking the progress of the project “Automation and optimization of fermentation energy”

On the afternoon of September 14, 2020, the Department of Science and Technology of Ho Chi Minh City. Can Tho established a delegation to inspect the progress of the project “Automation and energy optimization of the fermentation process” to control quality, improve productivity, and save energy in the fermentation process. Quoc Huy – Ho Chi Minh City University of Food Technology is the chairperson. 3 Con Shrimp Technology Joint Stock Company is the main implementation unit.

Overview of the test session

Over the time of implementation, the project has implemented the contents of increasing fermentation efficiency (reducing the heating time from 6 hours to 2 hours); Reduce energy costs by more than 20-30%; Reduce labor by 40-50% in the fermentation stage; Product quality control.

Implementation results: Reduced energy costs from more than 50%; Reduce labor by 40-50% in the fermentation stage. This result can be even better when the factory capacity is scaled up and reached full capacity. Previously, manual operation took 4 personnel to operate 8 fermentation tanks, now only 2 employees are needed to operate all 8 fermentation tanks; Connecting automatic fermentation system, helping to control the quality of fermented products. Data connection of technical parameters with mobile phone, helping to control remotely, office, no need to go to the field; Increase the fermentation capacity of the plant by 10-20% by shortening the heating time. The time to raise the temperature of the fermentation solution from normal temperature to the optimum temperature for fermentation from 60-65% from 6 hours ago, is now shortened to 4 hours. The total fermentation time per batch from 15 days, is now shortened to about 13 days, resulting in better product quality, is expected to reduce from 20% (2nd grade) to 5-10% ( class 2) after improvement.

Expected work to be implemented in the near future: Continue to accelerate the progress and carry out the remaining steps of the project to complete in October-November 2020. The report summarizing the test and acceptance on the process of technological innovation implemented, recording actual operation data, expected implementation, economic and social efficiency, etc. has been achieved.

The inspection team assessed that the system was fully installed, the project was implemented on schedule, but the project manager needed to edit and add some content according to the comments of the team members.
