The main content of the topic highlighted the great potential of EPS from LAB in food, pharmaceutical and medical… EPS is a natural polymer with many important biological functions and is one of the main components. in the cell walls of all living things, including bacteria. EPS can be produced by plants, algae, fungi, and bacteria. Among the bacteria that can produce EPS, LAB has received the most attention because of its strong ability to produce EPS. Streptococcus, Lactococcus, Pediococcus, Lactobacillus, Leuconostoc, and Weissella species are the LAB strains that commonly produce EPS. EPS from LAB is widely used in the food industry to improve the texture and photosensitivity of fermented dairy and pastry products such as yogurt, cheese and bread. EPS from LAB can stimulate and regulate the immune system, lower blood cholesterol. The contribution of biopolymers to the commercial market is still limited. Bacterial metabolism was significantly improved using environmental stress.
